Abstract

Tujuan dari penelitian ini mendapatkan pati ubi jalar yang sudah termodifikasi dengan tekhnik asetilasi serta mengetahui hubungan antara pati terasetilasi terhadap nilai derajat substitusi (DS) dan persen (%) asetil. Hasil penelitian menunjukkan bahwa Waktu hidrolisis mempengaruhi hasil hidrolisis dari kadar karbohidrat, dimana semakin lama waktu hidrolisis semakin kecil kadar karbohidrat yang diperoleh. Nilai DS dan persen asetil semakin lama waktu pati yang diasetilasi yang dilakukan maka semakin banyak gugus OH- yang tersubstitusi oleh gugus asetil. Sedang Hasil analisis menggunakan Fourier transform infrared spectrophotometer (FTIR) pada pati terasetilasi atau termodifikasi tidak terdapat gugus karbonil (C=C) karena tidak menunjukkan rentang panjang gelombang 1750-1800 cm1
